Ingredients
  

  • 250 grams Maggi
  • ½ cup Chopped onion 1 medium size
  • ½ cup Chopped tomato 1 medium size
  • 4 tablespoon Corn (fresh or frozen) ½ cup
  • 2 tablespoon Green peas (fresh or frozen) ¼ cup
  • 2 tablespoon Chopped Carrots ¼ cup
  • 3 tablespoon Chopped Capsicum ½ cup
  • 2 nos. Eggs
  • 2 teaspoon Maggi masala
  • 2 teaspoon Red chilli powder
  • 1 no. Green chiili Chopped
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Dark soya sauce
  • 1 tablespoon Chopped coriander
  • 2 tablespoon Cooking oil
  • Salt as per taste

Instructions
 

  • First, boil 4 cups of water in a cooking pot. Then add maggi in it, and allow to cook for 2 to 3 minutes, but cook carefully don't overcook maggi.
  • After that pour cooked Maggi into a colander. Drain all hot water and wash cooked maggi gently with normal water then keep aside. 
  • Heat ½ tablespoon oil in a kadhai, then scramble the two eggs in a kadhai. Cook it for 1 minute by stirring. The scrambled eggs are done when they are thickened and no visible liquid egg remains. Then remove it from the kadhai and keep it aside.
  • Further, remove it from the kadhai and keep it aside.
    Next, heat 1½ tablespoon oil in a kadhai, then add chopped onion and green chilli and fry it till it turns golden brown.
  • Now, add chopped carrot, green peas and chopped capsicum. Saute it well.
  • Mix it thoroughly
  • Now add chopped tomato and corn.
  • Mix all ingredients well and cook for 2 minutes. Then add red chilli powder, salt, maggi masala. Now cook all the ingredients for another 2 minutes.
  • Add 1 teaspoon dark soya sauce to it and mix well.
  • Now it's time to add maggi in it, add maggi carefully in it, because, it is all ready cooked. Add gently otherwise it gets smashed.
  • Along with maggi add chopped coriander.
  • Finally, add scrambled eggs to it and mix well.
  • Now, your egg bhurji maggi is ready to serve.
  • Serve hot egg bhurji maggi noodles with your favourite sauce or ketchup.

Notes

1 - Don't overcook Maggi noodles, otherwise, it will stick together.
2 - You can use olive oil instead of cooking oil.
3 - You can use vegetables of your choice.
