Apple Kheer (rabdi)
Apple Rabdi, Apple Kheer, or Apple basundi is an excellent variation to the regular rabdi made by thickening the full cream milk and apple giving it a nice crunch. People conscious of sugar can use the substitutes, this dessert is destined to please everyone. This easy dessert can be made quickly and decorated with apple and date slices. It looks best when served in a broad serving dish such that the apple slices can be lined properly for garnishing.

Apple rabdi Ingredients:
1 litre – full cream Milk
1 tablespoon – Sugar (as per your taste)
3 nos. – Fresh apples (Peeled and grated) – Medium-sized
2 tablespoons – Condensed milk
½ teaspoon – Cardamom powder
5-6 each – Chopped dry fruits (Cashew, Pistachio, Almonds)
8 nos. – Saffron strands
4 nos. – Dates (Sliced)
Method for preparing Apple rabdi with step by step photos:
1 – Add the milk to a cooking pot, boil on a medium flame for around 20-25 minutes, keep stirring occasionally till the quantity reduces to half.
In another pan roast chopped cashew nuts Almonds & Pistachios for 1 minute on low flame.
2 – Add roasted nuts, saffron, cardamom powder, 1 tablespoon sugar, condensed milk in boiling milk. keep continuing stirring while adding ingredients.
3 – Further add grated apples to the pan and saute it on low flame and add 1 tablespoon sugar in it. Cook it till sugar melts and the apple turns golden brown, keep gentle stirring while cooking.
4 – Now add apple and sugar mixture in boiling milk and stir it gently until the milk gets thicken.
5 – Now your apple rabdi is ready to eat garnish it with date slices and apple slices. you can serve it hot and chilled also.
Notes:-
1 – You can add a pinch of baking soda in milk while boiling before adding other ingredients, so it will not get curdling
2 – If you feel rabdi is not thick as you want. Mix 1 teaspoon cornflour in 1 tablespoon milk and add it in rabdi by gentle stirring and allow it to cook for 2 minutes.
3 – Apples sold in the market today are coated in wax. Make sure you wash the apples well before using them. Although you peel the apple, some of the wax may still be retained.
