Bhurji Pav | Anda bhurji recipe
Bhurji pav is one of the famous street food of India. It is a Hindi word Bhurji means scrambled egg. And pav is soft bread.
Basically, in a street style Bhurji pav, Bhurji made with eggs combined and Cook with onion, tomato, capsicum and serve with pav. But today we are making stuffing of scrambled eggs and fill it into pav with grated cheese. So, let’s see how to prepare this delicious recipe.

Ingredients:
6 nos. – Pav (Ladi Pav) Soft bread
4 nos. – Eggs
2 nos. – Onions (finely chopped)
1 no. – medium size Tomato (finely chopped)
2 nos. – medium size green Capsicum (finely chopped)
2 tablespoons – fresh Corn seeds
4-5 nos. – Garlic cloves (crushed)
2 tablespoons – chopped Coriander leaves
100 gms – salted Butter
75 gms – processed Cheese
½ teaspoon – Chilli flakes
1 tablespoon – Red chilli powder
½ teaspoon – Salt (as per taste)
1 teaspoon – Garam masala
2- 3 tablespoons – Cooking oil
Method for preparing Bhurji pav with step by step photos:
How to make Egg or Anda bhurji?
1 – Heat the pan or kadhai on medium flame add two tablespoons of oil. once oil gets heated then add chopped onions and fry till becomes translucent.
2 – Now add chopped tomato, capsicum, corn seeds and mix well, cook for a minute.
3 – Further add Red chilli powder, Garam masala, and salt to taste. Cook until little oil oozes out from it.
4- After that make a deep circle at the centre of this mixture, break 2 eggs and add them to it and mix it.
5 – Now break balance two eggs into it and again mix it well until scrambled eggs and vegetables cook and mix properly. It takes approximately 4-5 minutes.
6 – Finally sprinkle little coriander leaves over it, mix it and turn off the gas flame, your Egg or Anda bhurji is ready.
7 – Remove bhurji in a bowl and keep aside.
How to make garlic butter paste?
1 – Take a medium-size mixing bowl. Transfer soft butter into a bowl and whisk it a little bit, then add crushed garlic cloves, chopped coriander leaves, 1/2 teaspoon of chilli flakes, and mix it well. Your garlic butter paste is ready.
2- Keep it aside.
How to cut pav?
Put 6 pav slab on a flat surface and separate each pav from each other and take one pav, cut it from the centre. Do the same with all pav.
How to make bhurji pav with extra cheese?
1 – Now open one pav gently. (like opening your book) apply a little bit of soft butter on it, then stuff the bhurji on the lower side of the pav. Spread grated processed cheese over bhurji after that cover the upper piece of pav on it and press slowly.
2 – Further heat pan on medium flame and spread 1/4 tablespoon of garlic butter paste and put pav on it. Now lower the gas flame and allow the pav to bake for 1-2 minutes.
3 – After 2 minutes apply 1/4 tablespoon of garlic butter paste on top of pav.
4 – Now hold the pav properly with the help of two spoons or tongs and flip the pav upside down and again bake it for only a minute otherwise it will get burned.
5 – Now flip again pav and remove it from pan and put it in to plate. Here’s your Bhurji pav with extra cheese is ready to serve. Serve it with tomato sauce or any chutney you like and enjoy.
Notes:
1 – Add eggs as per requirement don’t add all taken eggs at once.
2 – You can use vegetables of your choice.
3- I used here processed cheese. you can use sliced or mozzarella cheese.
