Sweet Lassi and Masala Lassi Recipes

Nowadays various types of Lassi such as Strawberry Lassi, Rose Lassi, Mango Lassi, Plain Lassi are available but there are two main types of famous Lassi – sweet and salty masala lassi.
Lassi and Mattha or Chaas or Spiced Buttermilk, this Yogurt-based beverage is a classic Indian summer drink. A couple of spices and fresh herbs blended with yogurt and water make this thirst quencher. It is a great way to stay hydrated.
In today’s post, we are going to make two types of lassi. Sweet and spicy lassi. So, let’s start the recipe.
Sweet Lassi recipe:
Sweet Lassi is a creamy, sweet, and cold drink made from the same Punjabi food and is very popular in North India. It is usually served as a cold drink after a meal or in the evening on summer days.
Nowadays, various types of Lassi are available there are two main types of Lassi – sweet and salty spicy lassi. In this recipe, we are making both sweet as well as salty lassi. First, it is whipped till it becomes soft and later sugar is added for sweetness, and cardamom is added for a good aroma. Finally, a little water or milk is added to make thick or thin lassi as per your liking. Lassi has the same main ingredients and hence the entire flavor depends on it. At home use, only those made from full-fat milk, and to make the right lassi, take care that it is not sour. Sweet Lassi and Masala Lassi Recipe Video:
Ingredients for sweet lassi
1 cup – (250 gms) – Yogurt (Dahi)
3 tablespoons – Powdered Sugar
½ cup (100 ml) – Milk
4-5 Nos. – Saffron strands
¼ teaspoon – Cardamom powder
½ teaspoon – Salt (as per your taste)
2-4 tablespoon – Water
4-5 nos. – Ice cubes
2-3 nos – Pistachios (chopped)
2-3 nos. – Almonds (chopped)
Ingredients for Masala lassi or Mattha
1cup (250 gms) – Yogurt (Dahi)
1 glass (250 ml) – Chilled water
1 teaspoon – Cumin powder (Jeera)
¼ teaspoon – Black Pepper powder
¼ teaspoon – Asafoetida (hing)
2 nos. – Green Chillies (finely chopped)
1 tablespoon – chopped Coriander leaves
½ inch piece – Ginger (grated)
½ teaspoon – Salt (as per your taste)
Method for preparing sweet lassi with step by step photos:
1 – Before starting the recipe soak saffron strands in 1/2 cup of milk for at least 10 minutes and your saffron milk ready.
2 – Now take a 1 cup yogurt in a deep bowl and whisk a little with a hand blender or wooden whisk beater
3 – Then add powdered sugar and cardamom powder. Whisk it until the sugar gets dissolved. it takes a minute only.
4 – Further add saffron milk in it and whisk it for another minute.
5 – At the end add little chilled water or ice cubes, 1/4 teaspoon of salt (as per your taste), and whisk again.
6 – Garnish it with chopped dry fruits, saffron strands, and ice cubes.
7 – Your sweet Lassi is ready for serving.
Note:
1 – You can use curd or yogurt homemade or market. but take full-fat curd or yogurt.
2 – Don’t add too much milk.
3 – Adding dry fruits and saffron are optional.
4 – Once you make lassi store it in a refrigerator.
Masala Lassi / Mattha recipe:
Masala lassi or Mattha or Buttermilk is an amazing, cool, and refreshing beverage to serve on a hot summer day. It helps in curing stomach ailments, provides protection against heat strokes, and helps digestion. Make this refreshing drink for your family and friends
Mattha is a refreshing summer drink from Maharashtrian Cuisine. It is basically deliciously spiced buttermilk. An excellent summer coolant and very good for digestion, a typical Maharashtrian wedding will have Mattha served for sure. Classically it is prepared with buttermilk, but one can make it using plain yogurt as well. Mattha is spiced with ginger, cumin powder, green chilly, salt and the addition of fresh Coriander leaves makes it all the more flavorful.
Method for preparing Masala Lassi / Mattha recipe with step by step photos:
1 – Take a 1 cup yogurt in a mixing bowl.
2 – Whisk it a little with a wooden whisk beater or hand blender to make it lumps-free.
3 – Now add all spicy one by one like first add cumin powder then add chopped green chillies, grated ginger, 1/4 teaspoon black pepper powder, chopped coriander leaves, asafoetida, and salt to taste.
4 – Mix all ingredients well with yogurt and then add chilled water as much as you want your spicy lassi thick or thin. I have added here 1 glass (250 ml) of chilled water.
5 – Finally, whisk this for 3-4 minutes until a little fogy thin butter comes out on the surface.
6 – Now your spicy lassi/Mattha is ready. garnish it with Chopped coriander leaves and cumin powder.
Notes:
1 – Add chilled water to your likeness
2 – You can add mint leaves or Tulsi leaves instead of coriander leaves.
3 – Store in a refrigerator it will last for a minimum of 24 hours.

- ¼ teaspoon Cardamom powder
- ½ teaspoon Salt (as per your taste)
- 2-4 tablespoon Water
- 4-5 nos. Ice cubes
- 2-3 nos. Pistachios (chopped)
- 2-3 nos. Almonds (chopped)
