My kids call it the simplest Maggi ever and that I want to sound humble but trust me, this recipe is pretty incredible And healthy too.

 Egg maggi noodles recipe is a simple and quick maggi noodle with eggs. This recipe has maggi noodles tossed with scrambled eggs and vegetables to form it filling and attractive.

Egg bhurji maggi Ingredients:

250 gms – Maggi
1/2 cup – Chopped onions  (1 medium-sized)
1/2 cup – Chopped tomato  (1 medium-sized)
3 tablespoon – Corn (fresh or frozen)      ½ cup
2 tablespoons – Green peas (fresh or frozen)     ¼ cup
2 tablespoons – Chopped Carrots
3 tablespoons – Chopped capsicum     ½ cup
2 nos. -Eggs
2 tablespoon –  Maggi masala
1 no. – Green chiili  (Chopped)
½ teaspoon – Turmeric powder
2 teaspoon – Red chilli powder
1 teaspoon – Dark Soya sauce
1 tablespoon – Chopped Coriander
2 tablespoons – Cooking oil
Salt as per taste

Method for preparing Egg bhurji maggi with step by step photos:

 

1 – First, boil 4 cups of water in a cooking pot. Then add maggi in it, and allow to cook for 2 to 3 minutes, but cook carefully don’t over cook Maggi.

2 – After that pour cooked maggi into a colander or big strainer. Drain all hot water and wash cooked maggi gently with normal water then keep aside.

3 – Heat ½ tablespoon oil in a kadhai, then scramble the two eggs in a kadhai. Cook it for 1 minute by stirring. The scrambled eggs are done when they are thickened and no visible liquid egg remains. Then remove it from the kadhai and keep it aside.

4 – Next, heat 1 ½ tablespoon oil in a kadhai, then add chopped onion and green chili and fry it till it turns golden brown.

5 – Now, add chopped carrot, green peas, and chopped capsicum and saute it well. Mix thoroughly

6 – Now add chopped tomato and corn.

7 – Mix all ingredients well and cook for 2 minutes. Then add red chilli powder, salt, maggi masala. Now cook all the ingredients for another 2 minutes.

8 – Add 1 teaspoon dark soya sauce in it and mix well.

9 – Now it’s time to add maggi in it, add maggi carefully in it, because, it is all ready cooked. Add gently otherwise it gets smashed.

10 – Along with maggi add chopped coriander.

Notes:-

1 – Don’t overcook maggi noodles, otherwise, it will stick together.

2 – You can use olive oil instead of cooking oil.

3 – You can use vegetables of your choice.

Ingredients
  

  • 250 grams Maggi

Instructions

  • Mix all ingredients well and cook for 2 minutes.Then add red chilli powder, salt, maggi masala. Now cook all the ingredients for another 2 minutes.
  • Add 1 teaspoon dark soya sauce in it and mix well.
  • Now it's time to add maggi in it, add maggi carefully in it, because, it is all ready cooked. Add gently otherwise it gets smashed.
  • Along with maggi add chopped coriander.
  • Finally, add scrambled eggs in it and mix well.
  • Now, your egg bhurji maggi is ready to serve.
  • Serve hot egg bhurji maggi noodles with your favourite sauce or ketchup.

Notes
