Ingredients for Moong dal khichdi:
1 cup – Rice
1/4 cup – Moong dal
1 tablespoon – Cooking oil
1 teaspoon – Mustard seeds
4-5 nos. Curry leaves
1 teaspoon – Asafoetida (heeng)
1/2 teaspoon – Turmeric powder,
1 no. – Green chilli
1 teaspoon – Cumin seeds (Jeera )
10-15 nos. – Garlic cloves
1 tablespoon – chopped coriander leaves
Salt to taste (around 1 teaspoon)
2 and 1/4 cup – Water (the same cup that used for measuring rice )
Method for preparing moong dal khichdi with step by step photo:
1 – Rinse rice and moong dal with water until water gets clear then drain out the whole water from it.
2 – Heat cooking oil in a small cooking pot or directly in the cooker Add one by one all ingredients like mustard seeds, cumin seeds, crushed garlic, green chilli, and curry leaves.
3 – Saute it well when mustard and cumin seeds start crackling and garlic change its colour to light brown then add soaked moong dal and fry it well for a minute.
4 – Further add turmeric powder and asafoetida and salt to it And Saute for minutes.
5 – Now it’s time to adding water to it ( Room temperature water) as we are preparing khichdi so add a little bit more water than usually you used to cooking rice. So I usually add water double of rice while normal cooking. But here for making khichdi we need rice cook to be softer so I have added 1/4 cup more, so a total of 2 and 1/4 cup water is used here.
6 – Now add chopped coriander leaves and allow them to boil.
7 – Once water gets boiled add soaked rice in it and mix it gently well.
8 – If you are using a separate pot then transfer this mix to the cooker. if you are directly using the cooker from starting then cover the lid and cook for 3 whistles. Turn off the gas and let the pressure of the cooker dissipate. It will take about 8-10 minutes. If you open the lid immediately, then the khichdi may remain raw.
9 – And your hot and yummy khichdi is ready to serve. Garnish it with a few chopped coriander leaves. Serve with ghee and enjoy your tasty yummy and easy meal.
Note:-
1 – You can also use ghee instead of oil to make it. And after it is made, you can put ghee on top of hot khichdi and eat it with papad or pickle.
2 – If you are preparing khichdi for a baby then avoid spices and salt. You can add the veggies suggested by your pediatrician.
3 – If you want khichdi to be softer, increase the amount of water a little and if you want fluffy, reduce it a little.
4 – you can add peas, potato, cauliflower, bell pepper, onion, carrot, etc to khichdi.
5 – If moong dal is not available or you don’t like then, you can use any pulses you like.
6 – Khichdi can be made directly in the pot without using a cooker. Fry the rice in a pot and add hot water and other ingredients as usual. It only takes about three times as much water. Add water to the roasted rice and cook on high flame without a lid.
