Pav bhaji recipe Mumbai style
Pav Bhaji is a popular West Indian snack. It is the most liked street food in Mumbai. It is famous all over the world. The word Pav Bhaji is derived from the Marathi language Pav and Bhaji. Pav is a type of double roti (bread) and Bhaji is prepared by cooking vegetables. Vegetables like tomatoes, green peas, potatoes, carrots, onions, capsicum, cauliflower, etc. in ghee, butter, or oil. It can be made very easily at home. You can easily prepare Pav Bhaji at lunch or dinner and serve it hot with salad and lemon.
There are many variations of pav bhaji include Cheese pav bhaji, with cheese on top of the bhaji, Fried pav bhaji, with the pav tossed in the bhaji, Paneer pav bhaji, with paneer cheese in the bhaji. Mushroom pav bhaji, with mushrooms in the bhaji. Khada pav bhaji, with vegetable chunks in the bhaji. Jain pav bhaji, without onions and garlic. Kolhapuri pav bhaji, using a spice mix common in Kolhapur, White pav bhaji, with no garam masala and no chilli powder

Ingredients for Pav bhaji recipe:
1 – Ladi Pav ( bread slab) – around 20 pavs
3 nos. – Chopped Potatoes medium-sized – Peel off its skin before cutting
3 nos. – Onions medium-sized – Grind it and prepare its paste
2 tablespoons – ginger garlic paste
3 nos. – Tomatoes medium-sized – Grind it and prepare its puree (smooth cream)
1 cup – Chopped cauliflower (150 gram)
4 tablespoon – Green peas (75 grams)
1/2 cup – Chopped Capsicum (100 grams)
2 tablespoon – Coriander leaves
1/2 teaspoon – Turmeric powder
1 teaspoon – Coriander powder
2 tablespoon – Red chilli powder – as per taste
1 1/2 teaspoon – Pav bhaji masala
1 teaspoon – Salt (as per taste)
4 tablespoon – Butter (100 grams)
1 teaspoon – Shah jeera
1 no. – Bay leaf
pinch of – Cherry red food colour (optional)
Method for preparing Pav Bhaji recipe with step by step photos:
How to prepare Bhaji:
1 – First cook all vegetable potatoes, cauliflower, capsicum, green peas (if you have frozen peas then no need to cook them, as they are already cooked) then add 1½ cup water in a pressure cooker and cook till 3 whistles.
2 – Drain all the water from cooked vegetables in a clean pot, and keep aside (don’t throw that water, use it for preparing bhaji)
3 – Now lightly smash the vegetables with the help of a smasher
4 – Don’t smash too much, don’t make its paste.
5 – Further heat 2 tablespoons of cooking oil and 2 tablespoons butter in a kadhai.
6 – Now add 1 teaspoon shah jeera and bay leaf in it.
7 – When jeera starts crackling then add onion paste in it, and cook until it turns light golden brown.
8 – Now add ginger garlic paste to it, cook for 1 minute. then add red chilli powder, pav bhaji masala, turmeric powder, coriander powder, salt, and a pinch of food to colour it.
9 – Mix it well for 4-5 minutes till oil oozes out on a medium flame.
10 – Now add tomato puree to it.
11 – Mix it well and cook for 2 minutes
12 – Finally add cooked vegetables into it.
13 – Mix it well and add 1 cup of hot water (which was kept aside after draining vegetables, in step 2)
14 – In the end add the remaining 2 tablespoons of butter and chopped coriander leaves.
Now your bhaji is ready to serve.
How to roast Pav:
1 – Heat the pan on medium flame, Spread a small quantity of butter on it.
2 – Cut the pav loaf from the centre with a knife just before the end.
3 – Keep the end part connected to both pieces.
4 – Now bake the pav lightly on both sides.
5 – Apply little butter on both sides and bake it.
6 – Take out roasted pav on the plate, and roast all the pav in a similar way.
Now Pav Bhaji is ready to serve, Serve it hot with chopped onion, lemon slice and garnish it with coriander leaves.
