White Sauce Pasta Recipe
Basically, Pasta is Italian food and is widely adopted by Indians. This kids-friendly delicious macaroni pasta is an extremely easy recipe. Pasta is made from durum (pasta wheat or macaroni wheat) wheat flour mixed with eggs or water. It is rich in protein and complex carbohydrates, low in fat, and if made with whole wheat pasta can be a highly nutritious food. It can be eaten for breakfast, lunch, or dinner. Pasta is so tasty that your child wouldn’t mind eating it any time of the day. This nutritious food provides them energy throughout the day and also supplies folic acid, fiber, and other nutrients. What’s more, you can add as many vegetables and herbs as you want to make sure that your child is having a balanced diet. Instead of cheese, milk has used in this recipe with maida and vegetables.
Selection of Perfect Pasta:
There are so many shapes available in the market and some are better suited to this recipe than others. One more way to customize this recipe is with the type of pasta you use. It is better to avoid long pasta like spaghetti which is not really substantial enough to stand up to this sauce, while smaller shapes like orzo can easily get lost in it.
It is always best to choose shapes that are the ones with plenty of surface area and texture to capture and hold the sauce. Macaroni and penne pasta offers the sauce the opportunity to coat the pasta well, successfully bringing the dish together.
Cooking pasta:
When preparing the pasta, it is really important to cook it properly so that you end up with well-seasoned pasta that has the desired texture. which really means that the pasta has retained some of its. toothsome bite.
The best way to ensure that you have perfectly cooked pasta is by starting in a large pot with plenty of water. Ideally, you will want to start with 6 cups of water for 2 cups of pasta.
After bringing the water up to a boil, add 1 teaspoon of salt. This part really is essential as you really need to season the pasta thoroughly. With the water still at a boil, add all of the pasta at once and stir immediately to ensure that it does not stick to the bottom.
When you are satisfied with the doneness of your pasta, strain it immediately, reserving 2 to 3 tbsps of the pasta water. Add the pasta to the white sauce and toss thoroughly.
That extra 2 to 3 tbsps of pasta water will come in handy in the event your sauce seems too thick. Usually, the white sauce thickens as it cools down so this stock always helps. Ingredients:
2 cups – Macaroni or Penne Pasta
2 cups – Milk
3 tablespoons – Cooking oil
3 tablespoons – Finely chopped Vegetables (Carrot, Capsicum, Corn)
2 nos. – Tomatoes (finely chopped)
2 tablespoons – Maida (all-purpose flour)
1 teaspoon – Garlic (finely chopped)
2 tablespoons – Butter
½ teaspoon – Black pepper powder
1½ teaspoon – Salt (as per taste)
Instructions for preparing white sauce pasta with step by step photos:
1 – Bring 6 cups of water to a boil in a large pot along with 1 tablespoon of salt.
2 – When the water begins to boil rapidly add pasta. Boil it for 7 minutes or till pasta become tender yet should get a bite into it (not too soft).
3 – Drain off to a colander completely reserving 3 cups pasta water/ stock.
Making the white sauce:
4 – Take a pan, Heat 2 teaspoons of oil then add chopped garlic to it. Saute it for 1 minute then add chopped tomatoes and other vegetables. Mix well and allow to fry for 2 minutes or saute vegetables until slightly tender yet crunchy.
5 – Further take a cooking pot and on low flame heat 2 tablespoons of butter. Then add 2 tablespoon maida into it. Saute well on low flame. Now add 2 cups of milk by stirring continuously to avoided forming lumps in it. If required use a whisk to break the lumps. Cook for or 2-3 minutes or until the sauce turns silk smooth and creamy in texture.
6 – Add ½ tsp black pepper powder and ½ tsp salt, and mix well making sure everything is well combined.
7 – Now add sauteed vegetables and combine well.
8 – At the end add boiled pasta and mix gently.
9 – If the sauce is too thick, you can add 2 tbsps of reserved hot pasta cooked stock to loosen the thick sauce, and mix gently making sure everything is well combined.
Finally, your white sauce macaroni pasta is ready.
You can garnish it with fresh coriander leaves, and serve hot.
